Banana Split Breakfast (vegan)

Following my raw vegan Banana Split Ice Cream, my Fro-Yo Banana Split and my slightly decadent Banana Split Oatmeal, I come to you with this incredibly healthy breakfast edition of banana split today! 

Healthy ingredients, like yogurt, fresh fruits, oats and nuts that make up this banana split may already be part of your breakfast routine, but when you dress them up in a fun banana split bowl somehow, they just seem so special :)

Ingredients

2 bananas, ripe
1/2 cup coconut soy yogurt (you can use your own homemade soy yogurt or any other yogurt of your choice)
1/2 cup granola (such as my homemade Maple Nut Granola)
Fresh strawberries (or other berries)

(optional) maple or agave syrup to sweeten
(optional) berry jam, additionally or instead of the fresh fruit


Instructions

Preparing this banana split is so easy, even the kids can do it!

For one banana split, cut a banana in half lengthwise and place in the dish. Add a few scoops of yogurt, and a layer of strawberries, cherries or any of your favourite fruits on top of the banana slices. Then sprinkle a generous amount of granola (or raw oats and nuts) on top. You may also add fruit jelly, shredded coconut or even chocolate sauce if you like. For a little extra sweetness drizzle with maple or agave.

Repeat with remaining banana, to prepare second banana split. Serve immediately.

Note: Another option would be to prepare this as a parfait, layering banana slices, granola, yogurt and berries into 2 glasses instead.
